Ingredients
½ cup sugar
½ cup finely chopped onion
½ cup red wine vinegar
1 tsp salt
½ tsp dry mustard
1 cup canola oil
2 Tbsp strawberry jam (May substitute raspberry, blackberry or blueberry jam.)
Instructions
Combine sugar and onion. Mix Well.
Add dry mustard and salt to sugar & onion mixture. Mix Well. Allow to sit for a few minutes to allow onions to start to break down.
Add red wine vinegar. Mix well.
Using a food processor (or blender) puree mixture for one minute.
Add strawberry jam. Puree for two minutes.
Keep pureeing while slowly pouring in canola oil until the dressing has emulsified (oil & vinegar no longer separate). This should take 2-3 minutes.
Keep in refrigerator in air tight container. Mix well before serving.
